6, 4 oz frozen boneless chicken breasts
2 tablespoons olive oil, divided use
1 teaspoon dried thyme leaves
1 teaspoon low sodium chicken base
½ teaspoon kosher salt (optional)
½ teaspoon black pepper
2 cups Flame-Roasted Super Supper Apples
(or 2 cups apple slices, tossed with 1 tablespoon liquid butter and ¼ teaspoon ground cinnamon)
1 cup sliced onions
1 teaspoon minced garlic in water
1 ½ cups apple juice
¼ cup lemon juice
¼ cup sherry wine
4 ½ teaspoons cider vinegar
1 tablespoon cornstarch
2 oz portion cup and lid
Station Instructions to create freezer meal:
10. Place bag of chicken, bag of apple mixture, bag of sauce and portion cup in storage bag and seal, making sure label is visible.
Preparation: Thaw completely. If frozen or partially frozen, defrost in microwave. Do not over-microwave, or chicken will become tough.
Cooking Instructions: Heat skillet over medium-high heat. Add 2 tablespoons of cooking oil, or spray skillet with non-stick coating. Add chicken breasts and cook about 5 minutes on each side or until browned. Remove chicken from pan. Add apple mixture to skillet. (If desired, add 1 tablespoon butter or 1 tablespoon olive oil to apples). Cook and stir occasionally until golden, about 5 minutes. Add sauce. Bring to boil, stirring and scraping up brown bits with a wooden spoon. Return chicken to skillet. Reduce heat to medium. Cover and cook for another 5-8 minutes or until chicken is tender and reaches an internal temperature of 165F on an instant read thermometer. Mix ingredients in portion up together and pour it into skillet. Stir to combine and cook 1 minutes or until sauce is glossy and thickened.
