TOLEDO, Ohio (WTVG) - Order up! “Ghost Kitchens” -- or shared kitchens -- are popping up all across the country. They offer mainly take-out and delivery options, which makes it sound like a pandemic-friendly venture.

Right here in Toledo, we have Graze! Shared Kitchen. Managing Partner Rob Brant says the franchise started in February 2020, but because of COVID-19, the team had to rethink operations at its two new locations. So they eliminated indoor dining, and stuck solely to the to-go options.

”Well it has been a challenge, just because of demand,” says Brant. “We expected demand to go up for takeout and delivery, and overall it has, although we haven’t seen it.”

Despite those challenges, the community has embraced the uniqueness of a shared kitchen.

“People really enjoy being able to choose between 3 or 4 different places in one order,” Brant told 13abc. “And I think that people are really becoming acclimated to eating at home and doing take-out, doing delivery. So we’re in a good position to service those folks.”

Graze! hosts four different restaurants: Oasis Eats Mediterranean, Mozza Pizza & Wings, Big Knuckle Burgers, and Wings Up -- which is solely available on DoorDash.

“I don’t think it’s going to go away,” adds Brant. “I think it’s going to continue after. There’s going to be a real strong demand for take-out and delivery, even after we’re through with this mess that we’re in.”
